Prepare water to 100ยฐ C. Add one teaspoon of leaves per 500ml. Steep for 2 minutes minimum
Description
Tucked inside a dark cafรฉ, look across to the garden where ferns and palms enshroud bohemian locals and curious visitors. The wait is imbued with positivity; there is no great art to infusing a perfect Rooibos, so there has been little anticipation leading to its arrival. Against the faint amber light of hanging lamps, a rich russet tea emerges from the shadows. The first sip is taken without hesitation; the tea is warmly sweet and earthy. Reliably true to form, Rooibos is tea for the soul – affirming trust and optimism, which sometimes in this world, could use the occasional win.
