Method
Prepare water of 100° C. Add one heaped teaspoon of tea leaves per 500ml. Steep for 2 – 4 minutes.

There is nowhere to sit; every corner of the boulangerie is used for the storage of baguettes and a few simple viennoiseries. They fill the brickwork room with a sweetness somehow tangible in the halos of the dim amber lights. Cumulous meringues sit high above the breads in the window like clouds over rolling wheat-fields. The dearth of seating pledges their fate to an alfresco luncheon by the lake, accompanied by a sweet and bready winterspice tea. A small boy near the water’s edge whispers ‘coucou les canards’ before scattering tiny handfuls of breadcrumbs under the watchful eye of his grandfather – who quietly greets the ducks in kind. Outside of Paris, time whiles-away quickly but equally moves more slowly. An itinerary, diligently slated for the city’s museums, is commandeered by hours of reverent meditation on lakeside perishables. Just like yesterday, and most probably, tomorrow.
