Prepare water of 90° C. Add one heaped teaspoon of tea leaves per 500ml. Steep for 3 minutes.

Honeysuckle Darjeeling Tea
On a porphyry ledge sits a sparkling glass teapot, warming in the early morning light. The steam makes for a misty windowpane. As each drop condenses and refracts, microscopic rainbows fleetingly paint the air in hues of every colour before evaporating. Just outside, a strident procession of white ducks parade past. Beside the teapot is a small vase of honeysuckle whose soft waxy petals will soon succumb to their confinement. As the pot of Honeysuckle Darjeeling tea reaches shades of deep chestnut, the ducks return only to absent again. Their business is unknown, but the feathered timepiece will quietly punctuate every passing few minutes until elevenses. These ephemera are caught in a ballet of blossoming recession, a short-lived alliance destined to dissolve into memory. Yet a woody Darjeeling transforms this trajectory. A softly sweet sip crystallises the evanescent into magical recollection, retrievable at any moment henceforth, by the means of a simple cup of tea.
