Method
Prepare water to 80° C. Add one teaspoon of tea leaves up to 500ml. Steep for 2 minutes minimum

Moon and Sixpence | Tropical Green Tea
Under the stars, the land is transformed. The shifting sands settle, no longer animated by the scurrying creatures who retired with the sunshine. Tahitian white flowers bloom; their scent a silent bid for pollination, escorted by a pensive breeze. All is quiet but for the waves that roar for something ineffably profound; an omniscient declaration heard only by the sphynx moths. The night is so beautiful one’s spirit seems ready to be whisked away by the winds, in congress with the scent of coastal gardenias. The soul relinquishes body in favour of the ocean, cautioning permanent departure. But at dawn, it is shepherded ashore by the rising sun, disentangled from the bewitching night. The spirit bides its time in reluctant corporeal refuge until, in the company of moths pursuing the moon, it will race to the dark shores to sing again with the summons of the evening sea.
