The Golden Rule for all tea brewing is to prepare the water before anything else. (It helps to remember “Leaves in Last”)
White and Green tea leaves are more delicate than hardy black tea and will simply burn if they come into contact with boiling water. We recommend brewing at a temperature of 80°C. If you have a fancy kettle, fantastic! However there is an easy alternative. To create the perfect temperature add 20 – 25% cool tap water to your pot or cup before filling the rest with water from a freshly boiled kettle. This will bring your water temperature down to approx 80°, the perfect temperature to infuse green tea. Finally, add your tea leaves and you’re ready to go.
