Method
Prepare water to 100° C. Add one heaped teaspoon of tea leaves per 500ml. Steep for 4 minutes minimum.

Hinterland | Mint & Strawberry Herbal Tea
Parched grasses hypnotically animate, audibly weaving a textured melody. Each blade’s frenetic movement collectively forges a billowing landscape that peacefully recedes and ascends. Among them is a piece of blotted parchment, jars of water in shades of yellow and red, and two cups of tea – one of which is strangely colourful. Distracted by the coursing winds, this first cup of mint and strawberry herbal tea found accidental purpose in capturing unwanted pigments. The second cup, reproachfully poured, is fragrant and complex, with no one singular component declaring itself as the brew evolves beyond the sum of its parts. The breeze drops and an unwelcome dilemma arises; a choice must be made between blending the colours while still wet, or sipping the tea while still warm. Hesitation will see both lost to the Westerlies.
